This hard cheese is ideal for grating, are aged a minimum of one year but can be aged up to 8 depending on how strong we want it to be. Svíþjóð, named after the Old Norse name for “Sweden”, is a strong hard ricotta with an absolutely incredible and distinct flavor that will knock you off your feet but pull you back in for more.
